
Nothing says fall like chicken salad, right? Wrong, but I am still going to share this recipe with you (and I guess it could work for fall if you have an over abundance of basil in your garden). My sister reminded me yesterday that I made Apricot Basil Chicken Salad for the Mother’s Day brunch we had in honor of our mom and grandma’s. It is too good to keep quiet for another six months and can really be made at any time of the year. It isn’t spicy either. Do not get scared by the paprika. It just makes it a pretty color.
