pizza with a "fun guy"

I had a really delicious dinner last night and I made it myself = miracle.  I was inspired by this photo that I found on Pinterest.  It took about ten minutes to make and tasted wonderful.  I am not trying to 100% completely substitute pizza dough, either - not my intention at all.  This is just a pizza-like dinner option that is super quick and really easy, which also happens to be gluten-free.  

sautéed my portabellas in a sauce pan with butter until they were really soft.  I hate when you don't cook a portabella the entire way through and bite into it.  I am fine with mushroom textures, except for when the outside doesn't match the inside.  Next, I put tin foil down on a cookie sheet, placed the mushrooms underside up, put three large spoonfuls of my summer tomato puree, sprinkled raw green peppers, and cheese.  I broiled them until the cheese was golden, which only takes a few minutes.  I also sprinkled them with crushed red pepper.  I like putting this ingredient on when the cheese is melty, so it sticks.  Make sure you let them cool, so you don't burn your mouth on the hot tomato sauce or cheese.
