make your own lunch, use this

It feels really great to be back! It has been a while and I thank the folks who are actually still checking and reading this. The last two weeks have been an absolute whirlwind - between a work trip to Wisconsin for 9 days and buying a home.  (Yes, we are officially homeowners!) 

Last night was the first time in over two weeks that I was able to enjoy a home cooked meal (tacos, of course, made with langoustine tails), and today is the first day I actually made myself lunch.  Both meals were delicious and I wanted to share the recipe I used for my lunch because it was super easy and I think you should make it.  Click here to view the recipe.  I didn’t add the coriander or cumin.  I did however, add some farm fresh Jersey tomatoes and cayenne pepper.  Spice it up and enjoy!
