The fresh fish pickings were a bit limited last week, so my husband decided to go with red snapper. (We normally buy cod or haddock, but that wasn’t an option.) You had to buy the entire fish, but thankfully the nice man at Whole Foods offered to filet it for us. Phew!
What does one do with red snapper you ask? Add butter! He found this recipe and I want to share it with you. It was SO good. We ate it with broccoli, rice, a salad, and garlic bread. The majority of articles I read about snapper compared it to cod or haddock. It is a white fish with a nice, not-to-fishy taste, just watch out for a few small bones. As with cod or haddock, it tends to take on whatever flavors the items you cook it with have. All I am saying is give snapper a chance. Click here for the recipe.
