I really knocked it out of the park this past weekend with this dessert/breakfast treat. We celebrated Father’s Day early and I made this Strawberry Rhubarb Coffee Cake for my Dad. My sister and I put together an actual brunch, but I don’t want to talk about the other things; I want to talk about this. My Dad loves strawberry rhubarb, and although I love to bake and am pretty good at it, I have a fear of making pie. I need to shadow my Gammie one day and make her pass all of her pie knowledge down to me. Until then, I will be finding recipes that are non-pie.
I thought I didn’t like rhubarb until I tried a piece of this masterpiece. Surprise! I do! It is made in a springform pan, so it comes out looking great. I love using my springform pan. It makes cakes looks so professional. I am SO glad I budgeted time to make this for him because it was delicious. You should make it, too.
