healthy, gingery salad with kale

Even though I was exhausted last night and had some major trouble figuring out where my husband parked our car, twenty five minutes later I tackled the things on my list I that I said I would (except packing - I really hate packing). Once of those things was making a kale salad for my lunches today and tomorrow. I like kale, but the thought of it raw put me off for some reason. I have always cooked it into a stir-fry or eaten kale chips. A dear friend made one for a potluck months ago (could have been years at this point) and I really enjoyed it, but I never thought "hey, I should make this". Truth be told I rarely ever think that because I am not the biggest fan of cooking. However, I am getting better and braver with it. 

I enjoyed some take out this past Monday from one of the establishments at Chelsea Market called Num Pang. It is most well-known for their sandwiches, but I ordered a bowl of their chicken soup and a kale salad. I have had one of their sandwiches and it was delicious, but after the weekend of fun I had I was craving something a little more health-conscious than a hoisin meatball sub. I enjoyed the soup immensely. I liked the kale salad, but thought to myself "this needs more ginger". Normally, I would just whine and not do anything about it, but this time I scoured the interwebs for a ginger-y kale salad and found one. It came out great and I only added a portion of what was on the actual recipe. I omitted the edamame (apparently soy is very bad for you), avocado (for fear of it getting nasty, but it would have been delish), bell pepper (didn't make the grocery list), snow peas (I don't do peas), and garlic (I knew I was going to be eating it at work).
