a winter-y dish for a summer-y weekend

I don't like sharing recipes before I actually try them out, but I am determined to make this over the weekend and (maybe) if I threaten it via social media it will actually happen. (If it doesn't happen I will make it next weekend instead.)  You are looking at a winter squash carbonara with pancetta and sage. We have fresh sage from our dear friend's garden and I want to use it. I am going to follow the recipe exactly (because let's face it - I cannot cook, I can bake) and use butternut squash.
