another surprising dessert

Today I want to comment on another example of a (surprisingly) delicious frozen treat I was lucky enough to try this past weekend.  I was treated to my second dinner at Fromagerie, which is in my opinion is THE best restaurant in New Jersey.  We began with a pretzel crusted crabcake, enjoyed duck and filet mignon for dinner, and finished with some incredible desserts. 

My husband had a chocolate and peanut butter bombe, which is not surprising at all.  That is his all-time number one favorite dessert combination.  I on the other hand, indulged (and by indulged I mean licked my plate clean) in a peach parfait.  Although that sounds pretty tame, I can assure you it was anything but.

Let me explain; picture building a one-inch high level of cut up Jersey poached peaches in a circular mold, removing the mold, topping it with creme fraiche, and sprinkling it with candied corn kernels.  Next to that was an olive oil polenta “cake”, which was more like a muffin, cut in half horizontally.  The top half rested on a diagonal against the bottom half, which had a perfectly rounded scoop of basil gelato on it.  And to finish it off, the plate was lined with three small dots of raspberry sauce along the edge. 

Best flavor combination ever.  Thank you Pastry Chef Stuart Marx.  Now the real question is, do I try and replicate this masterpiece, or let the amazing-ness live on in my memories…
