two outstanding recipes (for dinner)

I (of course) did not discover these recipes - my husband did.  I have experimented with quite a few dinner-type recipes lately, but they are not worthy of mentioning.  (Is it me? Yes. I should stick to baking. I get it.)  However, these two ARE worth mentioning and I want to share them with you:

Chicken Breasts Stuffed with Mushrooms and Spinach
Click here for a printable version of the recipe.  I am pretty sure he didn't make too many changes, except for using jalapeno almonds to give it an extra kick.  The sour cream made it creamy and wonderful.  It wasn't overly filling either because the creamy goodness was a result of sour cream, not cheese.  The only catch is that you have to like mushrooms and thankfully we do!  This recipe gets an A+ in my book. 

Chicken Chili
Click here for a printable version of the recipe.  This is more of a soup than a thick chili, but the flavor is absolutely wonderful.  It truly is SO delicious.  Unlike most chilies, this one takes about 25 minutes to prepare and cook, so not only is it packed with flavor, it can be put together rather quickly.  We frequent Mexican restaurants, and this meal was better than anything I have ever tasted in a restaurant.  I was also surprised to learn that roasted peanuts were an ingredient in this dish.  He left out the cilantro and used chicken breasts instead of a rotisserie chicken.  This recipe also gets an A+ in my book. 

I also have to thank him for providing me with such delicious dinners when he is home.  He is a culinary master...it seems to run in his family.
