My husband and I have been eating soup during the week for dinner. I found a Chicken Soup with Lime that he likes and requested for both last week and this week (but I can’t find the link right now) and I made myself Martha’s Sausage and Kale Soup last week and Grampa’s Bean Soup for this week. My sister and I went home two weekends ago and were able to visit with the grandparents. Grampa passed along this recipe:
½ cup ham
½ cup celery
½ cup carrots
Simmer in 2 cups of chicken broth for 15 minutes.
Add –
1 bunch of spinach (chopped)
1 can of dark red kidney beans (rinsed)
1 can of B&M baked beans (I get the vegetarian kind)
It is quite delicious and super easy to make. I ended up using deli ham and turkey because we had some leftover from our Saturday breakfast (Monte Cristo’s - yum), but his recipe calls for a cubed ham steak. Bon appétit!

ReplyDeleteThe recipe is posted above. I finally found it. I was only searching chicken and lime soup. Apparently I needed the vegetable in there to find the exact recipe I used. I still don't know how I found this. Maybe Pinterest?!?!?
