a light salad recipe, gluten free

I came across this salad recipe a few weeks ago and it has become my go-to lunch for the past three weeks.  It is quite good.  It is a perfect warm weather recipe - light and refreshing. 

I made it without the dressing for the last two weeks, as well as the cilantro, mint, and soybean sprouts, only because I am lazy.  It tastes good either way.  I thought I found it in a Bon Appétit magazine, but after searching for the link this morning, I realized it was actually from the Gluten-Free Goddess blog.  Click here for the full recipe and check out all of her recipes.  I tried things when we weren't eating gluten free and have never been disappointed.  Ever.  (The photo is from her blog and has the Gluten-Free Goddess name on it.)
