I came across this salad recipe a few weeks ago and it has become my go-to lunch for the past three weeks. It is quite good. It is a perfect warm weather recipe - light and refreshing.
I made it without the dressing for the last two weeks, as well as the cilantro, mint, and soybean sprouts, only because I am lazy. It tastes good either way. I thought I found it in a Bon Appétit magazine, but after searching for the link this morning, I realized it was actually from the Gluten-Free Goddess blog.
