a light, refreshing summer time dinner
I was on Long Island for a portion of this past week and had the meal pictured to the left for one of my dinners. I think it is such a brilliant meal idea, so I thought I would share. It was labeled as an appetizer, but I think worked extremely well as an entree. It was called Grilled Chicken Paillard and was a pounded boneless chicken breast topped with heirloom tomatoes, grilled corn, prosciutto, and shredded romaine lettuce. It was light, refreshing, and full of delicious summer flavors. They also went heavy on the black pepper, which I also enjoy. (I love food and also ordered a side of mashed potatoes.) Get yourself to a farm stand (for the majority of these ingredients) and recreate this meal. The actual meal can be found at a restaurant called FOUR Food Studio and Cocktail Salon in Melville, NY. Not really our type of restaurant, but we were very impressed with the food...
