I have mastered the art of storing my roasted and pureed tomatoes. Last year I had a major issue with bags that weren’t quite frozen falling in between the metal rungs of the freezer shelves. Once they did freeze, I sometimes wasn’t able to pull them out without tearing the plastic bags, which made for a real mess when thawing. I also had a few bags stick to other bags. This year I made sure to store the tomatoes flat, which will also quicken the thaw process because the mass of tomato isn’t concentrated in one area; it is spread out evenly throughout the entire bag. I also put folded paper towels between each bag, so I could remove them with ease. I am so excited to experiment with tomato recipes throughout winter. I will be sure to let you know if I find anything worthwhile.
