taking a break with a delicious meal

I was in charge of dinner on Saturday. Miraculously, no one was sick or poisoned after we were finished! I was pretty impressed with myself, although I really have Martha to thank. I made a steamed cod with ginger and scallions, string beans, jasmine rice, and the random side – garlic bread. (Again, the whole gluten free thing has really gone out the window.) It came out SO well that I just had to share this super simple recipe with you.

I actually volunteered to make dinner – shocking, I know! My husband was out all day capturing post-storm scenes from the neighboring town of Highlands. He and his cousin are putting together a video to create awareness, and I thought he deserved to be treated to dinner. I was nervous about many things; it would come out horribly, the entire house would smell like fish, etc. To my (and his) pleasant surprise, it came out wonderfully and the house smelled fine. I had my favorite Yankee Candle, Mountain Lodge, burning even before I started cooking, and the fish is cooked in a large skillet with the lid on. It tasted great and looked beautiful.
