I made dinner and it was pretty delicious

I actually got my s.h.i.t. together this past Sunday and prepped Monday night’s dinner for when my husband got home. I had yet to this - ever. Normally, I get home after work, act helpless, and beg to go out to eat because I am sick of my cooking and happy to have company around. This happens while he is racking his brain, trying to piece together a home cooked meal (that he will proceed to cook) because he has been on the road and is sick of eating out at horrible establishments for multiple meals, multiple days in a row. I finally listened and did something about it. Don’t I deserve a medal? Kidding. Not really.

I scoured the Smitten Kitchen website and found a recipe for Buttermilk Roast Chicken. I like dinner recipes with five ingredients or less. This one had nine and required brining the chicken overnight and then roasting it in a pan the following day.  I felt confident that I could do it and I did. The chicken was delicious. I used boneless and skinless breasts and it worked well.  I think using chicken with skin would be even better, but I have a problem touching raw chicken and went with what I know. I paired it with steamed broccoli, toasted almond rice pilaf, and a salad topped with carrots, green peppers, and caramelized onions (cooled). Click here for the recipe.
