I think a cocktail or two in the morning can be quite fun (on the weekend, silly), but I don’t necessarily love mimosas. I do enjoy bellinis, but contrary to popular belief - we don’t always have fresh fruit purée laying around.
This past weekend I substituted the orange juice with tart apple cider from our nearby farm market, and used prosecco instead of champagne. It was delicious. I have tried using cranberry juice and champagne, but the tart cider is my favorite by far. I was thinking about trying pineapple juice, but decided against it at the last moment. We also received champagne flutes for Christmas, so it was exciting to try out our new gifts with a delicious new discovery.
