I found a recipe for Cinnamon Roll Pancakes on Pinterest and thought I should give them a whirl for our Super Bowl Sunday breakfast. I thought it would be a good idea because our actual dinner and snacks weren’t overly fatty. Doesn't Super Bowl Sunday exist so men, women, and children have an excuse to splurge and eat horribly unhealthy food? Oh, there's a football game? Right...not in my little world. The pancakes were delicious, but they also confirmed that I cannot begin my day with overly sweet things. I think if I ate a bowl of spaghetti first, and then had the pancakes for dessert, I would have been much better off (and 20lbs heavier).
These pancakes are ridiculously cinnamon-y and sticky, just like real cinnamon buns. The brown sugar caramelizes and creates this delicious tasting layer, but don’t touch it until it is completely cooled. My pointer finger may or may not be burned. Click here for the recipe. I opted out of the cream cheese glaze because I thought it would be too much, and my husband doesn't like cream cheese. I also tested maple syrup vs. maple cream - maple syrup does the job! If you try and make them, I would put down your batter first, insert your swirl, and then cover it with more batter. They really are delicious, but the side that had the swirl got a little messy looking.
