I try to make my lunch for the week on Sundays and recently found a recipe that includes quinoa, veggies, and protein (in the form of eggs). My parents came to visit in August and took me on a shopping trip to Costco. I conducted an experiment to try and figure out if a membership would benefit my husband and me, and learned that it wouldn’t - it is way too much at once. However, while we were there we purchased a gigantic bag of organic quinoa for $5.00. I have been trying out all kinds of new recipes that use quinoa as an ingredient and want to share this Quinoa Fried Rice with you.
I do not add the frozen corn or frozen peas. I don’t really love eating frozen vegetable and I get cold sores, and peas are one of those foods that make one more susceptible. I also do not add the garlic because I eat this at work and even though I brush my teeth every day after my lunch, I feel it is something I can live without. I follow the rest of the recipe pretty closely and eat it either cold, or at room temperature. (Just say no to microwaves!) My husband has commented that it smells like real Chinese food, and honestly it tastes like it too…it’s just a much healthier version.
