I know most people do not eat gingerbread in the spring time, but I will be making these during any and all seasons of the year. They are damn good. I am not sure why they are called White Chocolate Gingerbread Blondies, as they look more like brownies than blondies, but are more like gingerbread “bars” if you ask me. I am not usually a fan of white chocolate either, but something kept telling me to make these, and boy am I glad I did! These are not healthy in any way. There are two and a half sticks of butter in these things, but as long as you don’t eat the entire pan and share them with your family or friends, you should be okay. It is a Martie Stew recipe and it is glorious. I brought one with me today to eat after my lunch, but it didn’t see past eleven o’clock. Next time I am going to a picnic or potluck, I am making these. I also used two Lindt brand white chocolate bars, which combined was 1.2 ounces short from what the recipe calls for, but it didn’t matter. My husband and friends should thank me for saving them from a few extra calories. (Yeah right.) Click here for the recipe.
