Work has been a nightmare lately, but I don’t like to use this as a means of bitching, so I am going to stop. Instead, I am going to share two ridiculously good recipes with you that we tried over Memorial Day Weekend. One is a salad and one is main course. I may have already posted the swordfish recipe, but I can’t remember and I have been doing a terrible job at labeling my posts since they changed the Blogger layout. I just don't have time to look right now.
I want to make the salad every day for the rest of my life. It is delicious. My husband was a little nervous because he doesn’t do mustard, but the scallions over-powered the mustard when we ate it day-of. Beware though - the mustard ends up over-powering the scallions if you let it sit overnight. You could really use any dressing to be frank – as long as it is homemade, delicious, and pairs well with corn and tomatoes. It is SO GOOD and we got to enjoy it (finally) on our decorated patio with all the lanterns lit!
