a healthy and delicious summer meal

I made this dish two nights ago and was thoroughly impressed. A coworker passed along the recipe and I am so very grateful. The toughest part was finding tomatillos, which turned out to not be that difficult at all (Whole Foods). It is perfect for summer, when fresh, local eggplant and tomatoes are abundant. I made a few changes due to supplies I was lacking, and it still turned out great; I omitted the garlic, I substituted water for the white wine, I used two large heirloom tomatoes instead of grape tomatoes, I used a jalapeno pepper instead of a poblano pepper, and I put dill in my yogurt sauce instead of tarragon. Whole foods didn’t have straight tarragon. Instead they had a seafood mix packet of herbs that included tarragon, along with dill and chervil. After realizing the tarragon smelled most like black licorice (yuck), I swapped it out. Tonight I am going to add cayenne pepper to the yogurt sauce, and see how that compliments the sweet and sourness of the eggplant. Click here for the recipe.
