a super easy dinner, cheesy and fresh

Cooking is not as much of a bother to me as it once was...unless my train is late and I get home after 8:00 p.m. Last week it was late and I found myself rummaging around our fridge. I had the idea to saute some tomatoes and red peppers and add them to some pasta. (Not super exciting, but this is pretty much my go to meal - some kind of warm veggies and pasta.) I let the tomatoes cook longer than the peppers, then added them to the cooked noodles...I believe they were elbows. I then added a few crumbles of herb goat cheese, and to my pleasant surprise it melted and became the most delicious goodness ever. (Maybe that is because I LOVE herbs, but I never use them because I ALWAYS use the wrong ones and ruin a meal.) I couldn't get it wrong with this attempt because the herbs were already added and tasted great! It was so easy and so, so good. I normally try and skip the cheese at dinner, but I was thrilled I went for it. I didn't think it would melt as much as it did either, but a little went a long way. Make this if you are pressed for time and enjoy it. It tastes decadent and delicious, and as long as you don't eat an entire pound of pasta, it really isn't too bad for you.
