Let the games begin! Fall is upon us and it is time to buy those tomatoes at bulk prices and roast, roast, roast! I tackled my first batch this past weekend and plan to do a few more this weekend. It seems like hard work now, but you will thank yourself when winter is upon us and you are missing that summer tomato taste, or when you are craving a hearty bowl of tomato soup and want to stir up a batch in your kitchen. (And dunk grilled cheese in it.)
My husband bought me this last batch of tomatoes and they were all plum. I cut them in half, roasted them for over an hour at 375 degrees with just olive oil and salt. When I went to puree them they weren’t very liquid-y, so I added a tablespoon more of olive oil into each blender-full. It worked well, but when I use regular tomatoes, I don’t need the additional oil. I will have to remind myself to leave out the oil in whatever I am making when using these bags. I can’t wait to do more. I love the way the house smells. Look here to read about my tomato roasting fun from last year.
