Although I don’t enjoy despise Rachel Ray, I will admit to liking one of her recipes. I have made her “Hot Potatoes” twice already this year, make that twice since the middle of January. I love anything potato. I actually just ate potato salad for my lunch today. They are delicious, filling, cheap, and pair well with most things. This past Christmas (which we celebrated in Janaury), my sister made her Secret Santa recipient a romantic dinner for two. She put things in Tupperware containers and gave instructions on how to cook or reheat each item. I was at her home while she was packaging everything and helped her get the Hot Potatoes ready.
I may have misled you with the title, but the hot potatoes we make are not spicy. They contain broccoli, cheese, plain yogurt, salt, and pepper. The recipe does call for pickled jalapeno chiles and chili powder, but I didn’t include those in my batches and neither did she. (The first time I made them, I even left out the yogurt – by mistake - oops.) Click here for the recipe and make them tonight with your dinner. They are wonderful.
I would also like to give a shout out to my friend in Boston who came up with the term "blazin". It is an amazing adjective that encompasses so much. Nice job, buddy.
