a creamy copy cat recipe that delivers

I really do miss Jell-O Pudding Pops and whatever those Jell-O fruit ones were called. They were tasty. The other day I was in the midst of my daily Pinterest session and noticed a recipe for Jell-O Pudding Pops. It said “just like the real thing”. I glanced over the recipe, which was a mere three ingredients, and it sounded quite promising. The popsicle pictured was the first one I unearthed out of our handy little popsicle makers. It was perfect! It looked professional and tasted spot on. It was smooth and chocolaty and delicious, and I want to make more. I saw one that had a salty caramel pudding layer in between the chocolate. Um...yes please! The recipe calls for one large box of instant pudding mix (I used chocolate), 3 cups of milk (I used 2%), and 2 cups of Cool Whip. Cool Whip is weird and I have reservations about using it sometimes, but in this instance it delivered. I crave chocolate ice cream every night before bed and (usually) limit myself to (only, ugh) three or four nights a week, but this recipe seems so healthy that I think I could get away with eating it all of the time. There was an even healthier version listed where you use sugar free pudding mix and Cool Whip, but there really aren’t that many calories in it to begin with. I highly recommend this recipe. It is a delicious treat, and because of the pudding mix, it stays quite solid and doesn’t drip all over the place.

  1. My favorite. I was so disappointed when they stopped the production of these delicious treats. My mother kept multiple boxes in the freezer at all times. Besides these and good ol plain ben and jerrys chocolate ice cream, I have only come across one other treat that delivers big time.... Coconut Bliss Chocolate Ice Cream bars. You must try them. I recently made my own and they turned out quite good, but you must try the original coconut bliss ones. Seriously.

  2. Send me the recipe. I like making things. Can you buy these bliss bars in a regular grocery store, or do you have to go to Whole Foods? I love the name, too. I bet they are totally blissed out.

    Here is the link to the actual coconut bliss bars maker. You really just have to get a box of them and I guarantee you will not be disappointed! They are all good but the chocolate ones are what I am talking about. You must get the chocolate ones. Amazing. Some regular stores carry them but most likely you will have to go to whole foods or something similar. I work at a natural food store and have 1 or 2 bars per shift. I cannot resist.   4. I will definitely try to make them. I will also purchase a box next time I am at Whole Foods. Not sure if you are a pistachio fan, but I tried using pistachio pudding for my most recent pudding pops, and man oh man, they are GOOD. I don't think I could live without ice cream and pizza.
