a refreshing twist on chicken salad

Not my chicken salad.
I had some major luck with the recipes I experimented with. I made three new things and they all turned out quite good. I wish dinner came out as well as the new recipes… We made our famous chicken curry, but added a touch way too much curry paste, and two-thirds of our guests don’t really handle spice well. Oopsy in the doopsy. Can you say disaster?

We didn’t get to try one of the recipes because we ended up eating breakfast late and skipping lunch on Saturday (and by skipping lunch, I mean eating ice cream after the beach). However, I brought the Lemon Cashew Chicken Salad to work today and ate it over lettuce. It was delicious. I omitted quite a few things from the recipe too, and did not follow the order or operations at all, but it still came out great. My husband cooked the chicken while I was at work, so it was room temperature when I got home. I whisked the yogurt, mayonnaise, cilantro, ginger, lemon zest, lemon juice, and scallions together, then stirred in the chicken and cashews. It is a clean, refreshing taste that would be delicious on a salad, or a roll. I highly recommend. Click here for the recipe.
