if you like eating potato salad

We were thrilled with the potato salad recipe we tried this past weekend. (The grilled cauliflower steaks with lemon and Parmesan cheese were not so good - very bland.) I found the potato recipe mentioned in a Whole Foods email. The official name is Vegan Potato Salad with Arugula and Celery. I was a little weary of a potato salad recipe that didn't contain at least a few hard boiled eggs, but it came out great! The ingredient list is small and the only real work is cooking and cooling the potatoes. I will also admit we have yet to try it with the arugula inside - both times we packaged it we forgot to stir it in, and though I know it would taste even more delicious with it, it tasted quite good without it too. The directions said to add it right before serving, but we packaged ours and took it to the beach and to work for today's lunch and in all of the hustle and bustle never got around to adding it. It is officially gone, so I won't get to try it with the arugula addition until I make it again...which will be in the next few weeks. Click here for the delicious recipe.

  1. I think we should try the arugs, but also an egg. Even though it was delish without it, I just like the texture an egg or two can bring to a potato salad. (ps, I sang "the song" when I read the post title).
